Carnival Cruise Line has announced a culinary expansion titled "The Next Course," which will introduce new specialty restaurants and bar concepts to its fleet beginning in 2027. The initiative includes the launch of dining venues such as Emeril’s Coastal Seafood, Uku Lei Lei, Fetaccine, and Le Bistro Musicale aboard the upcoming ships Carnival Festivale and Carnival Tropicale.

Expansion Timeline and New Vessels

The rollout of these dining concepts is tied to the debut of two new ships. According to official company statements, Carnival Festivale is scheduled to enter service in 2027, followed by Carnival Tropicale in 2028. These vessels are part of the cruise line’s strategy to increase capacity and modernize the onboard experience for its passengers. The company currently carries over six million guests annually, serving more than 100 million meals across its fleet.

  • Lido Marketplace: A "Lido Family Menu" has been introduced, focusing on items for younger passengers, alongside daily rotating specials at the BlueIguana Cantina.
  • Specialty Casual Dining: The cruise line is introducing "Bagels @ Sea," a venue specializing in fresh bagels. Additionally, Excel-class ships are hosting pop-up concepts, including "Fruity & Frosted" breakfast bars and dedicated milkshake stations.
  • Chef’s Table: The multi-course experience has been revamped to place a greater emphasis on regionally inspired cuisine.

The culinary strategy is led by Chief Culinary Officer Emeril Lagasse, who has been working to integrate diverse flavors into the cruise line’s menus. The company hosted an immersive showcase in New Orleans to preview these changes, highlighting the shift toward more specialized, destination-focused dining.
