Italian Pizza Chef Gregorio Parietti Wins world Championship with Traditional Rolling Pin Pizza
Lucca,Italy – January 26,2026 – Gregorio Parietti,a pizza chef originally from Pieve a Nievole (near Florence,Italy),has achieved international acclaim by winning a world championship title with his traditional rolling pin pizza.the competition, featuring over 600 competitors from 45 nations and judged by a panel of over 100 experts, showcased a diverse range of pizza-making styles.
Parietti, a former master instructor at the National Pizza Doc Academy, impressed the judges with his rendition of Arabic bread, cooked in a wood-fired oven using local ingredients.He successfully introduced the judges to the simplicity and quality of a pizza made with a rolling pin – a technique common in Italy but a surprise to many international palates.
“I brought Arabic bread to the competition, for its simplicity and goodness. Cooked in a wood oven, with local products, it convinced. I managed to bring a rolling pin pizza to world victory which is common for us but for the world it was a surprise,” Parietti explained.
Parietti’s culinary journey began with training as a pizza chef in Florence. He then embarked on an international career, sharing Italian culinary culture in Austria, Spain, the United States, Costa Rica, Panama, Colombia, Argentina, and uruguay. He later returned to Italy, working on the island of Elba before settling in Vorno, where he reconnected with local culinary traditions.
“I trained as a pizza chef in Firenze – Gregorio, born in 1986 and “pievarino doc” as he says, that is, Pieve a Nievole – and then I migrated abroad bringing Italian culture,” Parietti shared. “Passing by Austria, Spain, United States, Costa Rica, Panama, Colombia, Argentina and finally Uruguay. I returned to Italy and I worked on the island of Elba and then I ended up in Vorno where I rediscovered our local culture.”
