Digital recipe balancing, edible printing technology, and interactive artificial intelligence assistants took center stage at industry exhibitions in Poland, highlighting how automation and software are reshaping culinary production and restaurant operations. According to reports from Xinhua, events such as the Warsaw Sweet Tech trade fair and the concurrent ProKitchen Expo demonstrated the practical applications of software tools and hardware systems designed to modernize food preparation.
Digital Gelato Balancing at Warsaw Sweet Tech
At the Warsaw Sweet Tech trade fair held from Tuesday to Thursday, confectionery professionals utilized digital tools to standardize and refine frozen dessert recipes. According to Xinhua, creators and chefs interacted with screen instructions to balance the sweetness, fat content, and firmness of gelato while an automated function calculated exact ingredient proportions.
Aleksander Pitura, co-creator of the platform myGelato.eu, stated via Xinhua that the software aims to provide makers with the flexibility to develop natural recipes without relying on pre-made industrial mixes. Pitura noted that while following packet instructions produces a dessert, it often fails to teach the underlying mechanics of ingredient balancing. His platform, which he described as the first of its kind in Poland, also provides step-by-step production guidance. Pitura reported that the system’s flexibility supports international adaptation, noting that clients in Shanghai and Hong Kong frequently adjust formulations to meet regional preferences for lower sweetness levels.
Custom Confectionery Printing Systems
Confectionery decoration practices also shifted toward digital integration through specialized hardware presented at the exhibition. According to Xinhua, Lithuanian family business JetLt demonstrated flatbed printers capable of applying edible ink directly onto chocolates, cakes, and macarons using computer-generated designs and photographs.
A company representative stated via Xinhua that the business began manufacturing these specialized printers in 2016 and has maintained a sales presence in Poland for seven years. At the time production started, the enterprise was one of only three European manufacturers known to produce such equipment. According to the company representative, printing a standard name or logo takes approximately 30 seconds, whereas complex graphics on large cakes require up to two minutes. The technology adapts CD and DVD printing methods developed by the founder into food-safe applications, giving bakeries a method to combine personalized customer orders with repeatable production schedules.
Interactive Restaurant Menus via Zuzana AI
Restaurant front-of-house technology was featured at the concurrent ProKitchen Expo through platforms designed to replace static customer touchpoints. According to Xinhua, Polish venture Zuzana AI showcased a system that converts standard restaurant QR codes into interactive chat assistants.

Miron Blacerzak, co-founder of Zuzana AI, stated via Xinhua that traditional restaurant QR codes frequently direct diners to static PDF documents that offer minimal engagement. The new platform enables customers to scan a code, open a chat interface to request menu recommendations, and complete orders and payments without downloading a mobile application. For operators, the backend system tracks stock levels and compares dish performance metrics to streamline service management.
