La Brigade, a French carnivorous bistro concept known for its sliced meats and house-made fries, has opened its 20th restaurant at the Vélizy 2 shopping center in the western suburbs of Paris. Operated by the Kristy group, the new 140-seat location marks a major milestone as the brand targets millions of euros in revenue for 2026 and plans eight new openings across France.
### Expansion Driven by the Kristy Group at Vélizy 2
The new Vélizy 2 restaurant is managed by the Kristy group, founded and led by Thierry and Christelle Amichaud alongside Jérémie Amiel. The group already oversees roughly ten establishments across brands such as Berliner, Waffle, and Columbus Café.
Situated in a major commercial hub in the western Parisian region, the Vélizy 2 site accommodates 140 diners. The restaurant features La Brigade’s signature graphic and colorful interior design while blending table service with fast-casual conventions. Guests are served thinly sliced meats in takeaway-style trays, eaten using bamboo tongs.
### Network Economics and Growth Targets for 2026
La Brigade operates 11 corporate-owned locations and 9 franchised units. For the 2025 financial year, the network generated 18.2 M€ of chiffre d’affaires HT. High-performing restaurants pull an average pre-tax revenue of 2.7 M€ HT, with an average customer spend of 21 euros pre-tax. The brand recorded 777,000 covers served in 2026 up to the date of its reported figures.
Co-founders Tristan Clémençon and Édouard Katz aim to reach millions of euros in system-wide revenue in 2026, backed by eight openings throughout the year. Confirmed locations include Strasbourg in December 2026, Villeneuve-d’Ascq in February 2027, Aix-en-Provence in April, Nice in June, and Lyon Écully in September. Over the long term, the brand plans to open seven to ten units annually.
“Reaching 20 restaurants is an important milestone, but we are mostly focused on the future,” said Édouard Katz regarding the expansion strategy. “Our ambition is to accelerate, but in a controlled manner, without losing the fundamentals that make our identity.”
### Balancing Ingredient Sourcing Against Inflation
French meat consumption rose by 1.3 percent in 2025 following a 2.3 percent increase in 2024, maintaining an average consumption of 88.5 kilograms per capita in 2024, with imports accounting for 35 percent of the national market. Amid these figures, meat prices climbed by 15 to 20 percent over a two-year span before stabilizing recently.
To counter cost pressures while keeping products accessible, La Brigade maintains strict sourcing standards. The menu features French minced beef for tartar, Angus beef bavette, duck sourced from Maison Rougié, and Montbéliard IGP sausage. The brand's fries are prepared daily using Agria potatoes harvested from farms in Île-de-France and Picardie.
“Today, our ambition is to continue democratizing quality meat while evolving and premiumizing our offer,” Katz noted. “This requires increasingly demanding sourcing, special attention to the product, and a more accomplished experience.”
