Gone are the heavy drinking habits of his twenties, an era defined by vodka and social outings that called for multiple shots or heavy mixed drinks just to feel part of the party.
Today, Roach drinks Casamigos Reposado tequila. Poured over a couple of ice cubes for a slight chill, he now opts to sip the spirit slowly over the course of an entire evening rather than knocking back eight vodka cranberries.
The High-Low Pairing That Baffled Fashion Friends
Roach’s culinary evolution extends far beyond the bar.
He readily admits he was not always a fan of caviar. That resistance dissolved only after a client and friends pressured him at dinner to try it properly on a toast point with butter and crème fraîche.

Later, finding himself at home without traditional blinis or toast points, Roach improvised. He paired Imperia caviar with sour-cream-and-cheddar Ruffles chips.
