The recipe yields four to six servings and requires three main ingredients:

  • 6 cups diced seeded watermelon
  • Juice of 1 lemon
  • ⅓ cup granulated sugar

To prepare the dish, combine the watermelon, lemon juice, and sugar in a blender and puree on high speed for one minute, as reported by the Jamaica Gleaner. Strain the mixture through a fine-mesh sieve directly into a 9-by-13-inch baking pan. Cover the pan and freeze for at least two hours.

Once the mixture begins to solidify, use a fork to scrape the frozen base into tiny ice crystals. Return the pan to the freezer, repeating the scraping process every 30 minutes until the granita forms flaky crystals. The finished dessert can be served in paper cups, crystal glasses, or small bowls.
