A large-scale European study published in the International Journal of Cancer reveals that increasing processed meat consumption by just 30 grams daily raises the risk of gastric cancer by 9% and esophageal cancer by 13%. According to the Institut Català d’Oncologia (ICO), the research draws on data from the European Prospective Investigation into Cancer and Nutrition (EPIC) cohort, tracking more than 450,000 European participants over an average follow-up period exceeding 14 years.
Processed Meat Intake and Upper Gastrointestinal Cancers
The research evaluates the connection between processed meat consumption and the development of gastric and esophageal cancer. Processed meats—defined as items modified through curing, smoking, salting, or the addition of preservatives such as sausages, ham, cured ham, and bacon—show a clear statistical link to heightened disease incidence. According to findings led by the Idibell-ICO Nutrition and Cancer research group, a higher daily intake corresponds directly to an increased risk of developing both gastric cancer and esophageal adenocarcinoma.
The association is particularly pronounced for intestinal-type gastric cancer, which stands as one of the primary histological subtypes of the disease. Paula Jakszyn, director of the study, notes that generating this level of epidemiological evidence helps refine primary prevention strategies and supplies critical data to shape upcoming public health guidelines.
Tumor Subtypes and Anatomical Localizations
Detailed anatomical and tumor-subtype analyses confirm that the elevated risk profiles remain consistent across multiple forms of the disease. Beyond the primary findings on processed meats, the analysis uncovered preliminary trends regarding other protein sources. According to the research team, additional investigation is required to confirm a potential association between white meat consumption and gastric cancer risk within specific demographic sub-cohorts, notably among women.
