Rondo Bar is intentionally unassuming from the outside, contributing to its allure. The bar features just six seats arranged around a 15-foot long bar crafted from a single slab of 350-year-aged sapele wood – a material prized for its calming properties. Above the bar hangs an abstract painting by Reita Moriya, known for their operate with traditional Japanese indigo coloring and plaster. The lighting is designed to enhance the presentation of each drink, casting captivating shadows.
A Bartender’s Vision
The bar is the realization of Tatsuya Yoshida’s vision, stemming from his experiences as the chief bartender at Star Bar, a highly acclaimed Tokyo establishment. Unlike his previous role where he felt like a “cocktail machine,” Yoshida designed Rondo to foster conversation and connection with his patrons. He intentionally limited seating to six, ensuring each guest receives personalized attention.

Yoshida’s approach to cocktails emphasizes simplicity and quality ingredients. A Gin & Tonic made with Suntory’s Roku Sakura Bloom is a recommended starting point, showcasing the nuanced flavors of the gin with Fever Tree tonic water and a single slice of fresh ginger. Similarly, his vodka Martini utilizes Haku vodka, dry vermouth, and a single olive. The bar also boasts a curated selection of Japanese whiskies and rums.
