Essential Ingredients for Garlic Pepper Chicken

The dish requires 400 grams of boneless chicken breasts cut into half-inch pieces. According to the recipe details, the protein is seasoned with salt, half a teaspoon of crushed black peppercorns, and one tablespoon of cornflour before cooking. The aromatic base utilizes eight to ten garlic cloves—with two to three sliced and the remaining cloves chopped—along with one inch of chopped ginger.

Vegetable components include two spring onions, with the bulbs quartered and the greens split into half-inch lengths. Sauce flavorings feature one tablespoon of oyster sauce, two teaspoons of green chili sauce, and one teaspoon of stock cube powder. Cooking calls for two tablespoons of oil and a finishing touch of a cornflour slurry made with two teaspoons of cornflour.

Cooking Method and Wok Technique

Preparation begins by heating oil in a non-stick wok over high heat. Sliced and chopped garlic, chopped ginger, and the seasoned chicken pieces go into the pan to sauté for two to three minutes. The recipe then directs cooks to stir in the oyster sauce, green chili sauce, stock cube powder, and quartered spring onion bulbs, followed by another two to three minutes of sautéing.

The final stage incorporates the cornflour slurry and most of the chopped spring onion greens, reserving a portion for garnish. The finished dish transfers to a serving bowl, garnished with the reserved greens, and is served hot.
