SingleThread, World’s Joint No. 1 Restaurant, to Launch Exclusive Residency at Sydney’s Bathers’ Pavilion

Sydney’s Bathers’ Pavilion is set to host SingleThread, the Californian restaurant recently named joint number one in the world by La Liste, for an exclusive four-week residency from July 28 to August 23, 2026. This collaboration builds upon Bathers’ Pavilion’s successful partnerships with other Michelin-starred establishments, including L’Enclume in 2023 and 2025.

A Culinary Powerhouse: SingleThread’s Acclaim

Run by husband-and-wife team Kyle and Katina Connaughton, SingleThread earned its third Michelin star in 2018 and currently shares the top spot on La Liste with nine other restaurants, including Fresh York’s Le Bernardin . It is also recognized as North America’s “Best in the West” by The World’s 50 Best Restaurants .

Farm-to-Table Philosophy with a Japanese Influence

SingleThread’s culinary approach centers around showcasing the seasonality of Californian produce through a Japanese lens. The restaurant is deeply connected to its 24-acre regenerative farm in Sonoma County, where ingredients are harvested at peak freshness . This commitment to farm-to-table dining is a core element of the SingleThread experience.

The Residency Experience at Bathers’ Pavilion

The four-week residency will feature a 10-course tasting menu priced at $690 per person, mirroring the cost of dining at the Sonoma restaurant . Each meal will begin with SingleThread’s signature hassun course – a kaiseki-inspired presentation of up to 10 delicate bites, showcasing the day’s freshest ingredients arranged on a visually stunning floral display .

The dining room at Bathers’ Pavilion will be transformed with custom ceramics, flatware, and art installations to complement the SingleThread experience. The wine program will highlight both Sonoma and Australian wines, alongside Japanese sake and select Old World bottles .

Collaboration and Preparation

Bathers’ Pavilion executive chef Aaron Ward will spend several weeks in April at SingleThread’s Sonoma location to collaborate on menu development with Kyle Connaughton . The Connaughtons will also bring a large team to Sydney for the residency.
