While fruit juice contains vitamins and potassium, experts caution that it behaves very differently in the body compared to whole fruit due to how the sugar is processed.
Cellular Structure Dictates Sugar’s Impact
The health impact of fruit depends heavily on its physical structure, according to Sarah Berry, a nutritional scientist and professor at King’s College London. Berry notes that the sugar found inside whole fruit is classified as intrinsic sugar, which remains encapsulated within the food’s cellular structure.
When someone eats an orange or an apple, the body processes the sugar much differently than when drinking a glass of juice extracted from the same fruit.
How Whole Fruit Outranks Purées and Juices
According to controlled trials comparing whole fruit, puréed fruit, and fruit juice against equivalent amounts of added sugar, whole fruit ranks as the healthiest option. Puréed fruit ranks second because it retains the fiber of the whole fruit, while fruit juice ranks lower because the fiber is stripped away, leaving behind liquid sugars and some bioactive compounds like polyphenols.
Why Orange Juice Triggers Blood Sugar Surges
Tim Spector, an epidemiologist and professor at King’s College London, points to orange juice as a prime example of a beverage widely perceived as healthy despite its high sugar content.
Spector explains that while orange juice supplies certain vitamins and minerals, the absence of dietary fiber allows the body to absorb the sugars much faster than it would when eating a whole orange.
Reevaluating Juice as an Occasional Treat
This rapid absorption triggers an unnatural blood sugar surge. Consequently, experts suggest that fruit juice should be treated as an occasional treat rather than a daily beverage staple, despite its pleasant taste and vitamin content.
