The research, which utilized data from the UK Biobank biomedical database, analyzed the dietary habits and long-term health outcomes of participants to evaluate how coffee impacts hepatic function. According to lead study author Dr. Hyunseok Kim, a transplant hepatologist at Cedars-Sinai Medical Center, participants who drank coffee demonstrated lower levels of liver inflammation and higher levels of proteins indicative of healthy liver function. The protective association applied to both caffeinated and decaffeinated varieties, suggesting that non-caffeine components drive the physiological benefits.

Additional population studies support these findings. A 2021 study published in BMC Public Health analyzed data from approximately 500,000 individuals and reported a 21 percent lower risk of chronic liver disease among coffee consumers. Furthermore, research from BMJ Open involving more than 2.25 million participants indicated that drinking up to five cups of caffeinated coffee daily cut the risk of hepatocellular cancer in half.

Coffee contains hundreds of biologically active compounds beyond caffeine, including chlorogenic acids, polyphenols, and diterpenes. The Role of Decaffeinated Coffee

Because decaffeinated coffee yields similar protective associations against liver disease, researchers emphasize that caffeine is not the primary driver of these health outcomes. Dr. Marie L. Borum, director of the Division of Gastroenterology and Liver Disease at George Washington University, points out that decaf retains polyphenols and chlorogenic acids capable of exerting antioxidant effects. While these findings support unsweetened coffee as a simple dietary strategy for liver disease prevention, hepatologists maintain that further clinical investigations are necessary to fully map out the beneficial effects of coffee consumption upon the liver.
