The project stems from the childhood background of co-owner Caroline, who grew up in Haute-Savoie with a Franco-Swiss heritage, according to Actu Nice. Before pivoting to pastry, Caroline worked as a pharmacist while Stéphane pursued work as an artist and plasticien. The couple spent six years refining their business concept before undertaking professional pastry training with a Parisian chef who holds the Meilleur Ouvrier de France title. Recipe development for the shop officially began in January 2026.
“We’ve taken the time to construct our project and elaborate,” the couple stated, as reported by Actu Nice. “We’ve been working on the recipe since January. Now, we’re ready and impatient to open.”

Oh Meringue offers three distinct sizes for customers: a mini version, an individual portion, and a larger meringue meant for sharing. According to the owners, their signature recipe features “browned meringues, so a little more cooked, a whipped cream, and a pearl of coulis that explodes in the mouth.” Opening-day flavors include lemon, chocolate, caramel, honey, and plain.
The business relies exclusively on fresh, local ingredients. “We make the choice to work only fresh and local products,” Caroline and Stéphane told Actu Nice. “Our meringues will not be sold 24 hours after their production.”

Following their debut in Nice, the founders plan to scale the Oh Meringue brand to other southern French cities. According to the owners, future store openings are targeted for Aix-en-Provence, Antibes, and potentially Cannes.
