A new Manhattan bakery called Rye is drawing long lines in Soho by selling loaves of imported Austrian sourdough rye bread for $60 each, according to reporting by dpa and t-online.de.
The enterprise was founded by Martin Auer, whose family operates a third-generation bakery business with 45 branches in Austria, according to statements given to dpa by his son, Tim Auer. To replicate the exact quality of their European goods, the business imported a two-ton oven from Germany and brings in all raw materials directly from Austria. Even the store’s counter is crafted from wood sourced from Steiermark, according to t-online.de.
Pricing and Local Reception in New York
While standard loaves in New York typically cost a few dollars, and artisanal sourdoughs in many local bakeries sell for under $20, the $60 price tag for a 1.5-kilogram loaf at Rye has drawn significant public attention, as reported by t-online.de. Tim Auer acknowledged the online criticism regarding the cost, noting to dpa that much of the negative reaction came from outside New York. Local customers, by contrast, have not provided negative feedback, pointing out the extraordinarily high real estate and operating costs in Soho, according to t-online.de.
“That is one of the most expensive cities in the world, one of the most expensive streets in this most expensive city,” Tim Auer told dpa, suggesting critics examine local housing costs. At the bakery, the bread is sold whole or served as open-faced stullen topped with butter and chives, fish eggs, or chocolate cream.

Hearty rye bread is a staple of everyday diet in Austria and Germany, but it remains far less common across the United States.
