Ultra-processed foods and diets high in refined sugars and fried items drive systemic inflammation and accelerate chronic disease, according to recent medical research and public health analyses. Studies show these modern dietary staples can increase inflammatory biomarkers in the human body, raising the long-term risk of heart attacks, cancers, and metabolic disorders.
The Pro-Inflammatory Impact of Ultra-Processed Foods
Diets heavy in ultra-processed foods, red meat, and saturated fats boost inflammation and accelerate disease development, according to Marx and colleagues. In 2021, Marx’s research team reviewed 15 studies encompassing data from four million people worldwide, finding that individuals who consumed higher amounts of ultra-processed foods faced an elevated risk of heart attacks, cancers, depression, and premature death. Ultra-processed foods are defined as shelf-stable convenience items containing five or more ingredients almost never used in home kitchens, such as artificial colors, preservatives, and texture-enhancing compounds.
For every 100-gram increase in industrially manufactured foods consumed, the research demonstrated a 4 percent rise in levels of C-reactive protein (CRP). The liver produces CRP in response to inflammation, making it a standard general marker for inflammatory activity in the human body. According to public health estimates, these processed products account for nearly 60 percent of total calorie consumption in the United States and roughly half of calories in several other nations.
How Sugar and Fried Foods Disrupt the Body
Refined sugars and fried foods trigger specific metabolic and microbial disruptions that foster low-grade chronic inflammation. Shaw explains that refined sugars cause rapid blood glucose spikes followed by sharp crashes, which over time promote insulin resistance and place extra stress on the endocrine system.

Diets high in refined sugars also feed harmful gut bacteria and diminish microbial diversity. This imbalance can weaken the intestinal barrier, allowing toxins to pass into the bloodstream and further drive systemic inflammation. Similarly, fried foods are frequently cooked in refined oils heated to high temperatures, producing trans fats and oxidized oils that elevate oxidative stress and interfere with hormone regulation, including progesterone and estrogen.
Regular consumption of fried and sugary foods is closely linked to weight gain and type 2 diabetes. To mitigate these risks, health experts suggest moderating red meat intake, prioritizing quality over quantity, and swapping processed snacks for whole foods, lean proteins, and plant-based alternatives like legumes and tofu.
