The End of an Era on Regentschapsstraat
Chef Giovanni Bruno will serve his final dishes at Senzanome on October 31, bringing a close to a pillar of Brussels fine dining.
While tables remain available to book through January, the kitchen itself stops permanently at the end of October. The restaurant secured a Michelin star in 2004 and held it before losing the distinction earlier this year. Bruno insisted the loss of the star did not drive the closure. Instead, mounting financial realities crushed the fine-dining model.
Mounting Expenses and Empty Tables
Operating costs swelled relentlessly across rent, energy, wages, and raw materials. Consecutive wage indexations drove labor expenses to nearly 500,000 euros annually. That figure weighed heavily against a yearly turnover of roughly one million euros, figures reported by L’Echo show. Remodeling expenses compounded the strain, almost tripling during recent work.
At the same time, diner traffic plummeted. The restaurant slumped to a 50 percent occupancy rate as neighborhood disruptions and shifting consumer habits took their toll. Redecoration efforts along the Regentschapsstraat kept regular patrons away. Bruno remarked bluntly that the Zavel is no longer as attractive as it once was.

Shifting Habits and Accumulating Deficits
Weekday foot traffic across central Brussels suffered a decline. The rise of remote work and a drop in business lunches dried up dependable revenue streams.
The resulting shortfall left the establishment with 600,000 euros in losses over a two-year period. Seeking a path forward, Bruno initiated a judicial reorganization procedure earlier in the year alongside his legal counsel to restructure the accumulated debt.
Reinventing the Space as Trattoria GIO
The team opted for a reinvention tailored to tighter consumer budgets.
In early November, Bruno will open trattoria GIO at number 55 in the Regentschapsstraat, located just dozens of meters from Senzanome. The new concept trades haute cuisine for an accessible, lower-priced menu. Bruno maintained that while the culinary style changes, his creative passion and desire to please guests remain unchanged. Current Senzanome staff members have been offered the opportunity to join the new project.
