An Early Passion for Culinary Arts
Chef Jonathan’s culinary journey began in childhood, fostered by family traditions and a love for cooking shows. He fondly recalls cooking alongside his grandfather and recreating recipes inspired by chefs like Emeril Lagasse. This early exposure sparked a lifelong passion for food, connection, and creativity.
From Dishwasher to Executive Chef
At 17, Chef Jonathan began his professional career as a dishwasher at Universal Orlando, after relocating from Recent York to Florida. This initial role quickly evolved into a calling, drawn to the energy and teamwork of a restaurant kitchen. Over 14 years at Universal Orlando, he steadily rose through the ranks, holding positions from dishwasher to executive chef. He gained experience in diverse concepts, including seafood, sushi, catering, and flagship restaurant openings. He further honed his leadership skills with national restaurant groups and a farm-to-table restaurant in Naples.
Mentorship and Growth
Throughout his career, mentorship has been crucial to Chef Jonathan’s development. A particularly impactful mentor, Chef Raffy, a decorated Garde Manger chef with over 21 culinary competition gold medals, invited Jonathan to compete as an apprentice. Together, they won gold, validating Jonathan’s talent and work ethic.
Finding a Home at Truluck’s
Chef Jonathan joined Truluck’s drawn to the brand’s reputation for excellence, culinary integrity, and hospitality. He was particularly impressed by the restaurant’s dedication to sourcing the finest seasonal ingredients, including fresh Florida Stone Crab. He initially joined as Executive Sous Chef and was promoted to Executive Chef of Truluck’s Naples by the end of 2024.
