A Chevrolet P-Series step van transformed into a mobile coffee shop sits ready for customers in Crawford County, where 2026 Colonel Crawford graduate Ella Agee runs Honey Bean while balancing full-time college classes in physical therapy, Crawford County Now reported.

Agee spent months prior to the business’s launch developing more than 20 flavored syrups from scratch, including sugar-free caramel and vanilla, cold foams, boba, and gourmet whipped cream. Her menu features specialty coffees, lattes, cold brew, Americanos, chai, lemonade, energy fizzes, dirty sodas, and dirty Red Bulls.

From High School Senior to Mobile Coffee Owner

During November of her senior year at Colonel Crawford, Agee began considering a mobile coffee truck after working at Spot’s Rolling Bean. Startup costs initially made her hesitate, pointing her toward the traditional route of heading straight to college. Encouragement from her family and boyfriend shifted her perspective after her graduation in May, prompting her to take the leap into entrepreneurship.

Agee originally wanted to convert an old school bus into her coffee shop. Her father convinced her to take a different approach by transforming the Chevrolet step van instead, finishing the conversion just days before Honey Bean’s grand opening at Colonel Crawford’s annual fall festival.

Faith and Branding Behind the Honey Bean Name

The business name came to Agee while she was working out and listening to Olivia Rodrigo’s song “Honeybee,” matching a list of names her mother had compiled independently. Honey Bean’s logo features the phrase “Brewed With Purpose” alongside a small cross. Following her baptism before graduation, her pastor asked how she intended to serve God, inspiring her to use the branding to spark conversations about her Christian faith with curious customers.

Balancing College Studies with Running a Mobile Coffee Business

Agee maintains a schedule as a full-time college student studying physical therapy while operating the mobile coffee business. Her long-term plans include opening a permanent storefront while keeping the coffee truck running, and she views her degree as a backup plan if the business encounters difficulties. Customers can track daily schedules, seasonal menus, and specials through Honey Bean’s pages on Facebook, Instagram, and TikTok.
