It is with deep sadness that we announce the passing of Erica B. Copping (Lindsay) at the Moncton City Hospital, Moncton, NB on November 25, 2025, after a short battle with cancer.
Early Life and Family
Erica was born in 1990 in St. Stephen, NB, to Danny and Lori Dempsey.She married Brad Copping and was a devoted mother to their two daughters, Arya & Lila.
Work Ethic and Early Career
Erica possessed a strong work ethic from a young age.Her first job was at Lonicera Hall in St. Stephen at the age of 15, allowing her to purchase her first cell phone. While attending the University of New Brunswick (UNB), she honed her skills as a waitress in fine dining restaurants in Fredericton, NB.
Passions and Competitive Spirit
Erica was a fiercely competitive individual in all aspects of her life. A devoted fan of the New England Patriots,she enjoyed friendly banter and playful teasing during football season. She took grate pride in consistently defeating the men in her fantasy football leagues.
Pageantry and Life Skills
During her teenage years, Erica participated in pageants, developing valuable skills that she carried with her throughout her adult life. These experiences likely contributed to her confidence and poise.
