Fauchon’s Sweet Return: Expansion Strategy and New York City Comeback

After a two-decade absence, French gastronomy brand Fauchon has re-established a presence in New York City with a new hybrid boutique, bakery, café, and private dining space at 1100 Avenue of the Americas. This opening, completed at the end of 2025, marks a significant step in the company’s global expansion strategy, spearheaded by its recent acquisition and a focus on franchising.

A New Hybrid Space in Manhattan

The 500-square-meter location offers breakfast, brunch, and lunch service daily, closing to the public at 4 p.m., with private event availability in the evenings Monday through Friday. The establishment can accommodate 75-100 guests [1]. The New York location is a partnership with Restaurant Associates, a division of Compass Group [1], and reflects a growing trend of hybrid retail experiences.

Galapagos Acquisition and Global Ambitions

Fauchon was acquired in May 2024 by the Breton company Galapagos, which as well owns brands like Gavottes, Traou Mad, and Fossier biscuits [1]. Galapagos President Jérôme Tacquard emphasized the global appeal of French gastronomy and Parisian lifestyle [1]. The company achieved a turnover of 80 million euros in 2025 [4].

Franchising as a Key Growth Driver

Fauchon’s expansion relies heavily on a franchise model. In addition to the New York opening, the company plans six additional openings abroad this year and is undertaking renovations of existing stores [1]. A significant portion of this growth is focused on Costa Rica, where five locations are planned to open starting in 2026, in partnership with a local family-owned distribution company [1].

Strategic Partnerships and Training

Fauchon’s partnership approach varies depending on the project. The New York location benefits from Restaurant Associates’ expertise in dining and event catering, with the head of Restaurant Associates having prior experience with Fauchon at the Lucas Carton restaurant in Paris [1]. To maintain brand standards, Fauchon has established the “Fauchon Académie” in Paris, providing training to staff on customer service, product personalization, and signature packaging [1]. The Académie also offers tours of Fauchon’s manufacturing facilities.

Job Opportunities at the New York Location

Fauchon’s New York location is actively hiring, with positions including a Porter (starting at $18.00 – $20.00 per hour) [2] and an Executive Chef (salary $105,000 – $115,000 + 20% Bonus Eligibility) [3]. The Executive Chef role requires formal French Culinary Training [3].

Future Expansion and Focus Areas

Fauchon intends to further expand its presence in North and Central America, Asia (with an office in Tokyo), and the Middle East (with an office in Dubai) [1]. Specific projects include a café, bistro, and boutique in the St Regis hotel in Oman, and a residence in Dubai with amenities like a swimming pool and clubhouse, slated for completion in July 2027 [1]. The brand will also be present at the Singapore and Cannes duty free fairs in May and September, respectively, to increase visibility [4].
