Sartiano’s Italian Steakhouse Brings New York Flair to Wynn Las Vegas

Sartiano’s Italian Steakhouse officially opened its doors at Wynn Las Vegas on Wednesday, March 4, 2026, bringing a taste of its Manhattan origins to the Las Vegas Strip. The restaurant, a more expansive iteration of the original Sartiano’s in New York City, promises a theatrical dining experience with a focus on high-quality steaks and Italian cuisine.

A Culinary Vision by Alfred Portale and Michael Rubinstein

Legendary chef Alfred Portale, known for pioneering New American cooking and his work at Gotham Bar & Grill, serves as the culinary director of Sartiano’s Italian Steakhouse. Executive Chef Michael Rubinstein leads the kitchen team day-to-day.

Expanded Steak Program and Signature Dishes

Whereas the menu largely mirrors the New York location, the Las Vegas iteration boasts an expanded steak program. Diners can choose from cuts sourced from several U.S. Family ranches, including a 40-ounce, dry-aged bistecca Fiorentina from Double R Ranch in Washington state, and a 6-ounce filet mignon from Akaushi Reserve in Texas, featuring wagyu from Akaushi Japanese red cattle. The restaurant similarly offers a 10-ounce New York strip steak from Snake River Farms.

Signature dishes include caviar cannoli, a popular item from the New York location, and a variety of pastas such as butternut squash tortellini and Maine lobster bucatini. A unique offering is the tallow-aged porterhouse, a primal short loin aged in rendered beef fat and finished with herbs and spices, carved tableside.

Tableside Service and Culinary Theater

Sartiano’s emphasizes presentation and a theatrical dining experience. Large cuts of meat are sliced tableside, and pastas are finished with ingredients like black truffles directly at the diner’s table. The restaurant also features elegant steak carts for showcasing colossal cuts.

Cocktails Rooted in Italian Tradition

The cocktail program, curated by Wynn Resorts’ chief mixologist Mariena Mercer Boarini, draws inspiration from Italian culture. The menu features classic cocktails like martinis and Negronis, reinterpreted with Italian ingredients. Signature cocktails include the Rare Breed, a spicy martini, and the Dolce Vita, a Negroni Bianco variation.

Location and Ambiance

Sartiano’s Italian Steakhouse is located adjacent to the Zero Bond members’ club at Wynn Las Vegas. The restaurant seats approximately 140 guests across its main dining room, bar, lounge, private dining room, and terrace. It currently offers dinner service only, with plans to add lunch and brunch options, potentially including pizzas, in the future.
