Hygiene alarm at carnival donuts in Bavaria – authorities warn

The Bavarian State Office for Health and Food Safety warns against cream donuts: 11 of 18 samples showed hygiene deficiencies.

Munich – At carnival time, a warning from the Bavarian State Office for Health and Food Safety is attracting attention. When testing donuts with cream filling, more than half of all samples were negative. Of the 18 specimens examined, the authorities had to complain about eleven donuts due to poor hygiene.

Bavarian authorities test carnival doughnuts: alarming results

The results of the investigations show clear deficits in food hygiene. In nine of the eleven samples complained about, the storage temperatures were far too high. Storage that is too warm can cause bacteria and other microorganisms to multiply. In two other cases, the experts found increased levels of germs. All abnormalities were reported to the responsible food control authorities.

Despite the numerous defects, the inspectors only rated one donut as hazardous to health and unsuitable for consumption. Salmonella, which can lead to dangerous gastrointestinal diseases, was not detected in any of the samples. Last year, analyzes of 24 samples examined revealed only two complaints – at that time due to an excessively high concentration of Bacillus cereus.

Cream donuts are particularly susceptible to germs: this is what the experts advise

Cream fillings are significantly more vulnerable than classic jam variants. The reason lies in the composition: cream contains less sugar and no low pH value, which act as a natural barrier against germs in fruit fillings. If hygiene is inadequate during production, problematic pathogen growth can occur more quickly. Some of these germs have the potential to cause gastrointestinal problems. The authority recommends that consumers eat donuts with cream fillings quickly after purchasing them. If you don’t eat them straight away, you should definitely store the pastries in the fridge. Manufacturers, processors and retailers also have a duty: Continuous cooling and special care must be guaranteed during production, transport and storage.

Every year there are new donut variants on offer – this year a particularly unusual one: white sausage donuts. On Shrove Tuesday, these are available at various Munich city center pubs, including the Hofbräuhaus, the Augustiner am Dom and the Augustiner Stammhaus. (Source: dpa), (leo)
