How Dietary Factors Block or Boost Iron Absorption

Dietary components can either inhibit or enhance iron uptake in the gastrointestinal tract. Polyphenols and tannins found in black tea and coffee bind to non-heme iron—the type of iron found in plant foods and fortified products—forming an insoluble complex that the body cannot easily absorb. Drinking tea or coffee with a meal can reduce non-heme iron absorption by up to 90%, according to clinical research cited by the Office of Dietary Supplements (ODS) at the National Institutes of Health. The standard medical treatment remains therapeutic phlebotomy, a procedure that removes blood to deplete excess iron, as outlined by the Mayo Clinic. Physicians monitor serum ferritin and transferrin saturation levels regularly to determine the required frequency of blood removal.

Patients managing iron overload are generally advised by clinicians to avoid iron supplements and vitamin C supplements, which boost iron absorption. While enjoying tea or coffee with meals can help limit non-heme iron uptake, individuals must consult healthcare providers before making significant dietary changes, as severe iron accumulation requires direct medical intervention to prevent liver disease, diabetes, and heart complications.
