Libertario Coffee Roasters: A Colombian-Indian Fusion Brews in Delhi

Delhi’s culinary scene has a new contender, blending the rich heritage of Colombian coffee with a distinctly Indian ethos. Libertario Coffee co. & Roasters, which opened its first café in Greater Kailash 2 (GK2) on July 22, 2025, is the brainchild of founder Miguel Villaquiran and a collaboration with Secret Ingredient, a food and hospitality consultancy [1].

From Colombia to Delhi: A Founder’s Journey

Miguel Villaquiran, whose family has a long-standing history in the specialty coffee industry, envisioned bringing a premium coffee experience to India. Having spent his formative years in Colombia, and later studying and working in New York and London, Villaquiran identified a gap in the Indian market for a high-quality, thoughtfully designed coffee ecosystem [1]. He moved to India five years ago to realize this vision.

A Dialogue Between Cultures in Design

Libertario Coffee’s GK2 location stands out with its striking cobalt blue façade and inviting alfresco space. The interior design, anchored by steel, veneer, and lime plaster, aims for a balance between boldness and restraint. Hand-glazed tiles from Spain adorn the façade, referencing Latin American craft traditions, while earthy tones and greenery evoke Colombian landscapes [1]. The 70-seater café features custom-designed furniture with curved lines to promote openness and approachability.

Signature Blends and Culinary Pairings

Libertario Coffee offers signature blends tailored to the Indian palate, including Paz (caramel-chocolate), Libre (fruit-forward), and Rock/Specials, featuring exotic varietals like Geisha and Bourbon Sidra [3]. The food program, developed by Secret Ingredient, complements the coffee with high-end culinary pairings. Every detail, from cutlery to visual aesthetics, has been custom-designed to reflect the brand’s refined ethos [3].

Company Details

Libertario Coffee Roasters Private Limited was incorporated on January 13, 2025, and is located in South Delhi [4]. Miguel Eduardo Villaquiran is listed as a director of the company [4]. Miguel Villaquiran is also connected to 2 people at Libertario Coffee Roasters on LinkedIn [2].
