Uncles Rotisserie Chicken Sandwich Spot Opens in Cork’s English Market

Cork’s vibrant food scene welcomes a recent addition with the opening of Uncles, a rotisserie chicken sandwich shop located in the historic English Market. The venture, from owners Colin Ryan and Ciarán O’Reagan, builds on their existing success with other popular Cork eateries.

A New Spot in a Historic Setting

Uncles is situated in the former O’Mahony’s Butchers unit within the English Market, a renowned food market in the heart of Cork City. Despite the inclement weather on opening day, a queue quickly formed as customers eager to try the new lunch spot gathered outside.

Fresh Ingredients and Flavorful Sandwiches

The owners emphasize the employ of fresh ingredients, sourcing produce from neighboring stalls within the English Market. Their signature sandwich, ‘The OG’, features rotisserie chicken, rocket, stuffing, and garlic mayo served on a buttery roll. The rotisserie chickens themselves are supplied by O’Mahony’s butchers.

Expanding a Cork Food Empire

Colin Ryan and Ciarán O’Reagan are already well-known figures in Cork’s culinary landscape. They own and operate Paper Boys on Tobin Street, Goodhood in St Luke’s, and Hansom at the Marina Market. Ryan likewise serves as the general manager at the Oyster Bar on Patrick’s Street. The pair previously opened Hansum, a rotisserie chicken business, at the Marina Market in 2021.

Hospitality Roots

The brothers have a long history in the hospitality industry, with over 35 years of combined experience running venues including Sophies @ the Dean Dublin, Brick Lane Cork, Sober Lane Cork and Dublin, An Brog Bar & Voodoo Rooms nightclub Cork, and JJ Coppingers in Midleton.

“Come down for the craic and have some food while you’re here,” said Colin, inviting customers to experience the new spot.
