Isabel Schäufele-Elbers, assistant professor at the Faculty of Economics at the Free University of Bozen-Bolzano, addressed the complex ethical considerations surrounding meat consumption. She explained that high meat intake poses risks to both the environment and human health, and likewise raises significant ethical questions. Schäufele-Elbers emphasized that understanding the factors influencing dietary choices is more crucial than simply possessing knowledge about healthy eating. She provided examples of adjustments that can promote sustainable eating habits and strategies for motivating different demographics to adopt more mindful food practices.

Gisela Greinöcker and Laura Pircher, specialist teachers from the Haslach School of Home Economics and Nutrition, examined current nutritional trends and consumer behavior. They discussed how social media, digital advertising, and highly processed foods can subtly shape our dietary choices, emphasizing the growing importance of critical consumer awareness. They also shared creative and practical ideas for incorporating plant-based diets into everyday life.
