Designer Rice: A Potential Breakthrough in Combating Diabetes and Malnutrition in India

New Delhi – In a significant development for public health, Indian scientists have developed a “designer rice” engineered to address the growing concerns of diabetes and malnutrition across the nation. This innovative approach focuses on enhancing the nutritional profile of a staple food, offering a potential solution without requiring significant changes to dietary habits.

The Problem with Traditional Rice

While rice is a cornerstone of the Indian diet, polished white rice is primarily composed of starch and offers limited protein, fiber, and essential micronutrients. This carbohydrate-heavy composition contributes to rapid spikes in blood sugar levels, posing a particular risk in a country with a large population living with diabetes. Simultaneously, millions of Indians suffer from “hidden hunger”—a deficiency in vital nutrients despite adequate calorie intake.

Introducing Designer Rice

Researchers at the Council of Scientific and Industrial Research – National Institute for Interdisciplinary Science and Technology (CSIR-NIIST) in Thiruvananthapuram have created this nutritionally enhanced rice variety. Unlike genetically modified crops, this designer rice is produced using advanced food processing techniques, reconstructing the grain from its basic components. The process involves separating starch, protein, and fiber, then recombining them to maximize nutritional value.

How is it Made?

A key aspect of this innovation is the utilization of broken rice—fragments produced during milling often sold at low prices. Scientists grind this broken rice into flour, then fortify it with additional protein and essential micronutrients like iron, folic acid, and vitamin B12. The mixture is then processed and reshaped into grains resembling traditional rice.

Benefits of Designer Rice

This newly developed rice offers several potential health advantages:

  • Lower Glycemic Index: With a glycemic index below 55, designer rice releases glucose into the bloodstream more slowly, helping to manage blood sugar levels and potentially benefiting individuals with diabetes.
  • Higher Protein Content: The protein content is significantly increased, exceeding 20 percent compared to the 6-8 percent found in regular rice.
  • Micronutrient Enrichment: Fortification with iron, folic acid, and vitamin B12 helps prevent anemia and other nutrient deficiencies.

Despite these improvements, the designer rice maintains the familiar taste, texture, and cooking properties of traditional rice, potentially easing consumer acceptance. Improving the nutritional value of widely consumed staple foods like rice could have a substantial positive impact on public health in India.
