During the preservation stage, manufacturers use nitrates and nitrites to cure meats like ham, salami, and hot dogs. These compounds can react with amino proteins in the body to form nitrosamines, which the International Agency for Research on Cancer (IARC) classifies as potent carcinogens linked to digestive system tumors.
Cooking techniques further increase these risks. Additionally, cooking meat at moderate to high temperatures converts naturally occurring creatine into heterocyclic aromatic amines (HCAs). Once ingested, these amines are processed by the liver and can travel to the gut, elevating the risk of colorectal and liver cancers.
Beyond chemical additives, processed meats contain high levels of sodium. Excessive sodium consumption contributes directly to hypertension and an increased risk of cardiovascular disease, according to clinical data reviewed by health agencies.
