Gochang Food Industry Research Institute Pioneers Distilled Liquor Development with Local Agricultural Products
The Gochang Food Industry Research Institute is embarking on a research and development project focused on creating distilled liquors using locally sourced agricultural products. This initiative aims to bolster the competitiveness of Gochang’s traditional liquor industry and foster the development of high-value-added products, responding to growing consumer interest in traditional spirits.
Research Focus and Methodology
The research will center on scientifically analyzing the brewing characteristics of Gochang’s key agricultural products – rice, barley, sweet potatoes, and bokbunja (Korean raspberry) – to determine their suitability for distilled liquor production. Researchers will identify optimal manufacturing and maturation conditions for each raw material to ensure quality and distinct flavor profiles.
Expanding Product Lines
Beyond the core research, the Institute plans to leverage the developed distilled spirits in future research to create a diverse range of regionally distinctive products. These include whiskey, liqueurs, and bokbunja fortified wines. This expansion is intended to capitalize on the increasing popularity of traditional liquors and evolving consumer preferences.
Boosting Local Economy and Industry
This project is expected to contribute to the increased value of Gochang’s agricultural products and establish a unique, differentiated base for the local traditional liquor industry. The initiative addresses a growing need for strategies to strengthen industrial competitiveness within the sector.
Institute’s Vision for Sustainable Growth
“We will gradually advance research on traditional liquor based on Gochang agricultural products to create a sustainable local liquor industry ecosystem,” stated Park Saeng-gi, Research Director at the Gochang Food Industry Research Institute.
Collaboration with Korea Food Industry Cluster Promotion Agency
This research builds upon existing collaboration between the Gochang Food Industry Research Institute and the Korea Food Industry Cluster Promotion Agency. The two organizations signed a memorandum of understanding in September 2025 to jointly utilize black raspberry extract and develop the functional food industry. This partnership highlights a broader effort to enhance the value of local agricultural resources.
