René Redzepi, the celebrated chef and co-founder of the world-renowned restaurant Noma, has announced he is stepping away from daily operations following allegations of past abuse. The move comes after a Modern York Times investigation detailed claims of physical violence, psychological abuse, and intimidation from 35 former employees who worked at Noma between 2009 and 2017.

The New York Times report outlines allegations including physical violence, psychological abuse, punitive behavior over minor mistakes, and threats of career retaliation. Some former staff members claim they were subjected to physical assaults, such as being struck by Redzepi or hit with kitchen utensils like a barbecue fork during service. The article also brought renewed attention to Noma’s historical reliance on unpaid stagiaires (interns).
Redzepi’s Response and Resignation
In a statement posted on Instagram, Redzepi acknowledged the allegations and stated, “Recent weeks have brought attention and important conversations about our restaurant, our industry and my past leadership. I have worked to grow a better leader, and Noma has taken massive steps to transform its culture over many years. I recognize these changes do not repair the past. An apology is not enough; I capture responsibility for my own actions.” He announced his decision to step away from daily operations and allow the restaurant’s leadership team to guide Noma into its next chapter. Impact on Noma’s Los Angeles Residency and Beyond
The allegations surfaced just days before Noma began a 16-week residency in Los Angeles on March 11th. Restaurant Online notes that the residency launch was met with a protest led by former employees. Redzepi has also resigned from the board of MAD, the non-profit organization he founded in 2011. Food & Wine confirms that Noma’s Los Angeles residency will continue without Redzepi at the helm.

Founded in 2003, Noma revolutionized the culinary world with its focus on foraging and New Nordic cuisine. The restaurant has been named The World’s Best Restaurant five times by The World’s 50 Best Restaurants list (in 2010, 2011, 2012, 2014, and 2021).
