Two-Michelin-Starred Spectrum in Amsterdam to Close, Chef Sidney Schutte to Launch Fresh Concept
Amsterdam’s culinary scene is set for a shift as two-Michelin-starred restaurant Spectrum, led by Chef Sidney Schutte, will close its doors at the end of May 2026. The closure marks the end of an era for the Waldorf Astoria Amsterdam’s fine dining establishment, but signals the beginning of a new culinary venture within the same location.
A Celebrated Run at the Waldorf Astoria
Spectrum, formerly known as Librije’s Zusje Amsterdam, quickly rose to prominence under Chef Schutte’s leadership. Within seven months of taking the helm, he elevated the restaurant to two Michelin stars and a score of 18 Gault&Millau points. In 2018, Lekker magazine ranked Spectrum sixth among Dutch restaurants.
Chef Schutte currently oversees two kitchens: Spectrum and Goldfinch Brasserie, which opened in February 2015. Since December 2016, he has likewise led the kitchen at Cocina de Autor, a restaurant at the Grand Velas Los Cabos Hotel in Cabo San Lucas, Mexico, where he blends European, Asian, and South American flavors. Cocina de Autor was recognized as one of “The Best New Restaurants” by CNN in 2017.
A New Culinary Direction
While Spectrum will cease operations, the space will be reimagined with a new dining concept, also under the direction of Chef Schutte. Details about the new restaurant are currently limited, but it represents a continuation of Schutte’s commitment to innovation and culinary excellence within the Waldorf Astoria Amsterdam.
Sidney Schutte’s Background
Born in Middelburg, The Netherlands, in 1976, Sidney Schutte discovered his passion for cooking at a young age. He honed his skills through extensive training at renowned restaurants, including Restaurant Der Bloasbalg (1 Michelin star) under Jan Waghemans, Restaurant Scholteshof (2 Michelin stars) with Roger Souvereyns, and De Librije (3 Michelin stars) led by Jonnie Boer.
Spectrum’s Legacy
Spectrum, managed in collaboration with Cas Kratz, has been known for its dynamic approach and proud Dutch heritage. Chef Schutte emphasized the quality of local ingredients, stating, “We don’t have to travel abroad for the best and most attractive products, we have it all right here!” The restaurant’s closure represents a loss for Amsterdam’s dining scene, but the anticipation for Chef Schutte’s next venture is already building.
