A man in Moscow is recovering after suffering a life-threatening injury – a ruptured stomach – caused by consuming a cocktail containing liquid nitrogen. The incident, reported by the Russian publication Baza, highlights the extreme risks associated with the improper handling and consumption of this extremely cold substance. This event serves as a stark warning about the potential dangers of increasingly popular, yet perhaps hazardous, culinary trends like “cryo-cocktails” and molecular gastronomy.

The incident occurred at Igra Stolov’s culinary studio, “Table Game,” during a corporate Christmas party. Guests were being entertained by a “cryo show” featuring cocktails rapidly chilled with liquid nitrogen. While liquid nitrogen is a legitimate tool used in professional kitchens for specific applications, its use requires stringent safety protocols. The substance, which boils at -196°C (-321°F), quickly transforms from a liquid to a gas, expanding in volume hundreds of times over.

According to reports, the chef utilized liquid nitrogen to create a dramatic visual effect – a billowing fog emanating from the drinks. Guests, unaware of the inherent danger, reportedly laughed and filmed the spectacle. Tragically,a 38-year-old man, identified as Sergejs, was allegedly encouraged to drink his cocktail instantly after it was prepared.

Upon taking a sip, Sergejs immediately experienced discomfort as nitrogen vapor escaped from his mouth. He quickly collapsed, prompting immediate medical intervention. Doctors determined that the liquid nitrogen inside his stomach had rapidly expanded, causing a severe rupture. emergency surgery was performed, and he was admitted to the intensive care unit. While currently conscious and recovering, medical professionals have described his condition as serious.

The Science Behind the danger

Liquid nitrogen’s extreme cold and rapid expansion pose significant health risks when ingested. The dramatic temperature difference causes immediate and severe cryogenic burns to the mouth, esophagus, and stomach. More critically,
