Valladolid has been named the home of the best tapa in Spain and the world, securing both the XXI National Pinchos and Tapas Contest ‘Ciudad de Valladolid’ and the IX World Tapas Championship ‘Ciudad de Valladolid’ titles. The national crown remains in Valladolid with Alejandro San José’s Habanero Taquería. This marks a historic moment as the first time a contestant has repeated as winner in the contest’s history. Their winning tapa, ‘Milpa,’ features corn and rice stuffed with roast suckling lamb and a chintextle sauce, a traditional Mexican flavor.

The World Championship title, though, goes to Andrea Vignali of Australia with ‘Smoke under the lid.’ This traditional stew is paired with a kangaroo meat tartlet, delivering what Vignali described as “an explosion of flavors” and a novel experience for the judges.

Vignali’s ‘Smoke under the lid’ captivated the nine international judges with its unique blend of cultures. The tapa showcases Australia through the kangaroo, Italy – the chef’s birthplace – with guanciale, and spain, with a Pedro Ximénez wine bath. The presentation features a glass of smoked stew topped with a kangaroo tartlet, accompanied by Iberian ham and mustard, creating a truly memorable culinary experience.

The jury also awarded four second prizes, with Valladolid restaurants Azul Mediterráneo (‘Principino’) and Mélida Wines (‘Equilibrio’) each receiving recognition.

The awards ceremony, presided over by Valladolid’s mayor Jesús Julio Carnero, marked the close of both the National Pinchas and Tapas Contest and the IX World Tapas Championship. These events firmly establish Valladolid as the ‘World Tapa Capital’.

Attendees can sample all participating tapas at the ‘International Tapa Festival’ in the city’s sister restaurants until Sunday, november 16.
