## Springfield Restaurants Cited for Food Temperature issues

Several restaurants in the Springfield area had trouble keeping their food at the appropriate temperatures,Springfield-Greene County Health department food inspectors found this week.

The Missouri Food Code notes that refrigerated, potentially hazardous food shall be kept at a temperature of 41 degrees or below. But several food establishments were observed to keep food above these temperatures during inspections.

Among those was Village inn at 533 E. Elm St. in Republic. During an Aug. 14 routine inspection the restaurant was cited for three priority violations, all for foods being held above 41 degrees.those foods included cheese, observed at 54 degrees, ham at 63 degrees, cheese spread, butter, lettuce and melon. Food was discarded but a re-inspection will have to occur.

The Big Biscuit at 2920 S. Glenstone Ave. experienced similar issues, having been cited for an omelet prep cooler not holding proper temperatures for turkey, sausage, shredded cheese and salsa. These food items were placed on time control to be used or discarded within four hours at the time of the inspection.The restaurant was cited for two other priority violations due to not correctly marking foods on time control and having flies in the kitchen area. A re-inspection will be required.

Issues found during inspections fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross-contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health.
