René Redzepi, the globally renowned chef and co-founder of Noma, has announced his resignation from the leadership of the restaurant and from the board of directors of MAD, the non-profit organization he established in 2011. The decision follows a New York Times investigation detailing allegations of physical and psychological abuse experienced by former employees at Noma in Copenhagen.

Resignation and Apology

Redzepi announced his resignation in an emotional video posted on Instagram, addressing his team. He acknowledged past failings and stated his commitment to taking responsibility for his actions. He emphasized that Noma, currently operating a residency in Los Angeles, is stronger than ever and will continue its mission of culinary exploration under new leadership.

“Conversations and attention have focused on our restaurant, the sector and my past leadership in recent weeks. I worked to turn into a better leader and Noma has made great strides to transform its culture over the years. I recognize these changes and do not desire to deny the past. An apology is not enough: I seize responsibility for my actions. After more than two decades spent building and leading this restaurant, I have decided to step back and allow our extraordinary leaders to guide the restaurant into its next chapter,” Redzepi stated in his post.

The Allegations

The New York Times report featured accounts from dozens of former Noma employees who described a toxic work environment characterized by physical and psychological abuse. These allegations span years and detail instances of intimidation, bullying, and harsh treatment within the restaurant’s kitchens.

Noma’s Current Status and Future

Despite Redzepi’s departure, Noma’s Los Angeles residency, featuring dinners priced at $1,500 per person, will continue for another fifteen days. Redzepi will not be present during this period. The restaurant has been transitioning to an itinerant model following the closure of its historic Copenhagen location.

Protests organized by Jason Ignacio White and the One Fair Wage association have been held outside the Los Angeles villa hosting the residency, highlighting concerns about labor practices within the fine-dining industry.

Redzepi’s Response

Redzepi has acknowledged past shortcomings while asserting that he has evolved as a leader. He maintains that the current Noma team is thriving and capable of carrying forward the restaurant’s innovative culinary vision.

“Today’s Noma is stronger and more inspiring than ever. We’ve been open for 23 years and I’m incredibly proud of our people, our creativity and the direction it’s going. This team will continue the work during our residency in Los Angeles. It will be an important moment for them, to show what they have worked for and to welcome guests to something truly special. Noma’s mission for the future is to continue exploring ideas, discover new flavors and imagine what food could become in the decades to come. Noma has always been bigger than one person. And this next step honors this very belief,” Redzepi explained.
